Jiuyuan steamed stuffed buns began in 1931. The first shop was opened in jiaochangkou, Chongqing. It was the most "qualified" snack at that time. It was deeply loved by officials and celebrities. Jiuyuan baozi production technology has been inherited for more than 100 years. During the reign of Emperor Guangxu of the Qing Dynasty, there was a rich businessman named Zheng Xianyuan in Neijiang, Sichuan Province. He came from a family of gourmet families and was familiar with the way of delicacy and delicacy. Zheng Xianyuan added malt sugar and milk to the dough and chopped golden hook and water chestnut into the stuffing. This kind of steamed bun with white, soft and beautiful patterns has been highly praised by local celebrities and gentry, and is called "Yipin dim sum". After that, Zheng Junlin, Zheng Xianyuan"s nephew, came to Chongqing to make a living. He rented a small shop in houci street of Chongqing to sell snacks such as "Yipin dim sum". In 1931, a snack bar named "Jiuyuan" was opened in Yushi street of Chongqing City (in front of the light rail vent of today"s jiaochangkou triumphant Square). The owner"s name is Su zejiu. The name of the restaurant is taken from the third word "Nine" of Su zejiu"s name. The name "Jiuyuan" means "long-term". In order to avoid the fierce competition in the Chinese food market, Su zejiu specializes in snacks with distinctive characteristics, and asks Zheng Junlin, a famous snack chef, to manage the kitchen administration. On the basis of "Yipin dim sum", Zheng Junlin made great efforts in leather making, seasoning and craftsmanship to produce "Jiuyuan baozi". Jiuyuan steamed buns are different. Steamed buns are not sold as individual, but as "guests". One "guest" and two "sweet and salty steamed buns" are collectively referred to as "Jiuyuan baozi". Zheng Junlin integrated the production method of "Yipin dim sum" into Jiuyuan steamed buns, which was very popular with diners. In 1938, "Jiuyuan" snack bar was transferred to others. Since then, "Jiuyuan" has changed hands several times, and successively moved to Guanmiao, Ciqi street, Xinsheng market, Wusi Road, daomenkou, Datong Street and Zhongzheng road. By the 1980s, there were two "nine gardens" in Chongqing, one in Minzu road and one in Shangqing temple. Since 2000, due to the reconstruction of Chongqing"s old city, "Jiuyuan" has been "displaced" like many time-honored brands and faded out of the sight of the public. In 2016, "Jiuyuan" resurfaced and reopened in Shangqing temple, and invited back the descendants of Jiuyuan steamed stuffed bun. The reopened "Jiuyuan" has brought the characteristics of steamed buns into full play, making the old owners rush to tell each other, and new diners are eager to try. Every day, a long queue starts in front of the "Jiuyuan" gate, and Jiuyuan baozi whirlwind blows in Chongqing. The economic and social benefits of Jiuyuan brand are increasing. Compared with the original, Jiuyuan steamed stuffed buns have some changes in taste and vision. In terms of production technology and weight, they still follow the tradition. The weight of pickled meat and vegetable dumplings are 1251, with seven stuffing and eight skin. Baozi skin has also been improved. The original material of the dough is ordinary Fuqiang powder. Later, rose powder is selected. The skin is whiter and the taste is softer. Before the addition of milk powder, the face is now replaced by fresh milk, in order to promote the whiteness of the skin, but also make it more nutritious, easier to digest and absorb. The ratio of front blade and streaky pork in the stuffing of meat bag was 3:7, but now it is 7:3, which also meets the modern people"s eating habit of less oil. Since the return in 2016, every store has been queuing up. The 80 year old brand, new online celebrity, has its own traffic.
